Mint Frosted Brownies

Ingredients
Brownie Layer
1 15 oz can black beans, drained and well rinsed
2 tbsp cocoa powder
1/2 cup quick oats
1/4 tsp salt
1/3 cup maple syrup
2 tbsp sugar
1/4 cup vegetable oil
2 tsp vanilla extract
1/2 tsp baking powder
2/3 cup chocolate chips
Mint Frosting
2 cups powdered sugar
4 tbsp margarine
4 tsp plant milk
3/4 to 1 tsp peppermint extract
Chocolate Glaze
4 oz. unsweetened chocolate
4 tbsp margarine
Instructions
Brownie Layer
Preheat oven to 350 F. Combine all ingredients except chips in a food processor, and blend until completely smooth. Blend several minutes.
Stir in the chips by hand, then pour into a parchment lined 8×8 pan. Cook the black bean brownies 15-18 minutes, then let cool completely before adding the mint frosting.
Mint Frosting
In an approx. 8 inch bowl beat well the powdered sugar, margarine, soy milk and peppermint extract. Spread it evenly over the brownie layer and let it dry out a bit before adding the chocolate glaze.
Chocolate Glaze
Melt the chocolate and margarine and spread over the mint frosting. Let it cool for awhile before spreading it onto the mint frosting so it won't melt into the frosting. Refrigerate until firm.
Let the pan warm up slightly before cutting into pieces to avoid cracking the chocolate layer. A warm knife also helps.
Makes 9-12 brownies.
